Autumn Roasted Carrots with Digestive Ghee

INGREDIENTS: 1 lb baby carrots 1.5 TBSP Digestive Ghee Sea salt & ground black pepper to taste INSTRUCTIONS: 1) Preheat oven to 400 F 2) Lay out carrots on a baking sheet, then coat carrots with Digestive Ghee. 3) Season with sea salt and ground black pepper, and place in oven. 4) Halfway through cooking process (about 15 minutes in), stir carrots. 5) Remove when carrots are soft and cooked through (about 30 minutes), and enjoy! Prep Time: 2 minutes Cook Time: 30 minutes Makes: 1 lb roasted carrots
