Italian Ghee Whole Roasted Chicken

INGREDIENTS: 1 organic whole chicken (our chicken was 3 lbs) 2 TBSP Italian Ghee Sea salt & ground black pepper to taste 1 lemon, quartered 1 onion, quartered INSTRUCTIONS: 1) Stuff chicken with lemon and onion. 2) Rub chicken (on and under skin) with Italian Ghee. Be careful not to touch chicken and reach for more ghee as you will contaminate the ghee. 3) Season with salt and pepper, then place in oven at 375 F for 20 minutes per pound. 4) Broil to crisp skin a little (optional) for a few minutes. Prep Time: 3 minutes Cook Time: 60 minutes Makes: 1 whole chicken
