Paleo Diet Breakfast Recipe Idea: Delicata Squash & Scrambled Eggs!

INGREDIENTS: 1½ Tbsp Indian Dessert Ghee 1 Delicata squash, sliced in half lengthwise, seeds removed 3 eggs Sea salt to taste Ground black pepper to taste Hemp seeds to taste INSTRUCTIONS: 1) Preheat oven to 375F. 2) After slicing squash in half and removing seeds, spread 1 Tbsp ghee on insides of squash and place face-down on baking sheet. Place in oven and check after 30 minutes. The skin should be soft to the touch when done. 3) Melt ½ Tbsp ghee in frying pan, then add in eggs and scramble. 4) Carefully remove squash from oven, plate and season with salt and pepper. 5) Season eggs with salt and pepper. Serve with squash. 6) Top with hemp seeds and enjoy! Prep Time: 2 minutes Cook Time: 40 minutes Serves: 1-2
